Roasted Garlic Spread
Vegan

Total Time: 25 minutes
Yields: 1/2 Cup


2 whole heads garlic
2 T olive oil
4 T vegan margarine
2-3 T fresh basil, minced

Preheat the oven or toaster oven to 400.

Cut the tops (pointed ends) off of the garlic heads and place on baking sheet
with cut ends facing up. Drizzle the olive oil over the garlic and into the opening
created when the tops were cut. Bake for 12-15 minutes.

Allow the garlic to cool for about 10 minutes. Squeeze each clove out of its casing
into a bowl. Add margarine and mash them together. Add basil and stir until combined.
It's just that easy.

Try it as a sandwich spread or for garlic bread!

Variations:
Instead of margarine, try vegan sour cream, cream cheese, or mayo.
Use different fresh herbs.

This recipe was initially created for the Grilled Eggplant Portabella Sandwich
found in the Main Dish Entrees section of this forum.
