Potato au Gratin w/ Gruyere and Shallots
Vegetarian

Total Time to Grubbin Gratin: 1 1/2 hours

6 large red potatoes, sliced 1/4" to 1/2" inch thick
1 C shallots, sliced into rings
1/2 C cooking sherry
salt and pepper to taste
3 T flour
3 T butter
2 C milk
1 1/2 C Gruyere cheese. shredded

Preheat oven to 400 degrees.

Put sherry into bowl and soak shallots while preparing
rest of the dish.

Layer potatoes in 13"x9" casserole dish. Season with
salt and pepper.

Melt butter in saucepan over medium heat. Stir in flour
and salt, stirring constantly for a minute. Stir in milk and
cook until thickened. Add cheese and stir until melted.

Layer shallots over potatoes and pour remaining sherry
over them.

Pour cheese mixture over potatoes and shallots.

Cover dish and bake for 45 minutes to an hour until
potatoes are soft when pricked with a knife.
