Vegan Lentil, Greens and Sausage Stew
Vegan Italian sausage sauteed with onion, carrot and garlic,simmered with lentils, potatoes and greens in a vegetable broth for a hearty dinner. This is our house favorite.
Vegetable oil
2 Tofurkey Italian sausage, cut into chunks
1 large onion, chopped
2 large carrots, sliced
2 garlic cloves, minced
5 cups vegetable broth
2 cups diced potatoes
1/2 cup dry lentils
2 cups coarsely chopped Collard Greens or Kale
1. Grease sauce-pot with vegetable oil. Add sausage and cook until hot and a bit crisp.
2. ADD sausage, onion, carrots and garlic and cook until tender.
3. ADD broth, potatoes, greens and lentils. Heat to a boil. Cover and cook over low heat 45 minutes or until lentils are done.
4. Makes 8 servings |
