Ingredients:

Peeled Golden Potatoes or Brown. At least 5 large
2 teaspoons Pickle Relish
1/2 stalk Celery chopped
1 Small Onion (your preference) I use yellow chopped,
you could also use dry minced if you like, works great
1 teaspoon garlic powder
3 boiled eggs finely chopped
1 cup Mayo or Nayo (your preference)
1/2 teaspoon Paprika
Salt & Black pepper to taste

Lets get started:

Cut the potatoes in 2 inch chunks
Place in 5 quart boiler
Cover potatoes with water with teaspoon or so of salt, cook over medium
heat. Start checking after 20 min. by placing a potato cube on a spoon
and stick with a fork.

When potatoes are done drain and cool.
Then, add all of the above ingredients and fold till well coated.
The salt and pepper will be to your liking. Sprinkle Paprika on top too before serve. Makes for a nice presentation.
I usually add salt and pepper to the eggs when I chop them as well.
Best served chilled in Fridge over night so all flavor call an over night meeting!

Will serve aprox 8 / 10 people
